Is there a way with an essay question to require a certain amount of text to be typed into the space before the particpant will be allowed to move on?

If you have the professional version of Question Writer you can tick a box in the Quiz Properties-Question Options pop up to force an attempt at every question. There is a little bit more detail on this in our online manual:

This will require only one letter though - I'll add as a feature request, a way to specify the number of minimum characters typed before an essay question is regarded as being in an attempted state. Thanks for the suggestion.
